first up....
stuffed chicken with spinach, roasted red pepers and goat cheese w. potatoes and string beans.
this is one of my go-to meals... and it couldn't be easier! simply take a chicken breast (bone out) and stuff it with anything from goat cheese and roasted red peppers to feta and sun dried tomatoes. next place it in a pan with a bit of olive oil and some spices and put it in the over on three-fifty for a little under an hour (or until the chicken is cooked through). while the chicken is cooking cut a potato into cubes and sprinkle them olive oil and seasonings of your choice. they can go right into the oven along side the chicken. finally i took enough french cut green beans (frozen) out and boiled them until done.
this meal takes about an hour and is amazing. if you feel like making extra you can have the leftovers for lunch or dinner the next day!
